A few weeks back we had the pleasure of taking in a specialexperience with Bombay Sapphire in Toronto, which included cocktails and a helicopter ride over the city. One of the cocktails we sipped on was the Sparkling Sapphire, so for today’s cocktail hour we thought we’d share that recipe. Perfect for summer entertaining, this cocktail is a refreshing mix of fresh strawberry, gin, prosecco and lime.
2 oz Bombay Sapphire East Gin
1 oz fresh lime juice or juice of one small lime
1 oz simple syrup or 2 tsb fine white sugar
2 small fresh strawberries
Mint Sprig Garnish
Press strawberries into a base of glass. Add other ingredients into a cocktail shaker with ice and shake. Strain into a large wine glass filled with ice. Top with prosecco.
