This week in our cocktail hour series we had the pleasure of tasting some of Yorkville’s finest cocktails at Kasa Moto. Their edited cocktail menu may look short at first to some, but each cocktail is designed to perfectly compliment many of the items on their menu. Lead Bartender, Jonathan MacCalder, choose to riff off a classic Aviation cocktail, which isn’t dissimilar to what they call a Yoyogi cocktail, which gets its name from Yoyogi Park in Tokyo, Japan located near Meiji Shrine in Shibuya.

“We included the Yoyogi Cocktail on our menu because it is fresh and crisp and the acidity pairs well with the soy for sushi and robata grilled meats,” said MacCalder who has been in the beverage game for many years now.

INGREDIENTS

1½ oz Gin
½ oz Luxardo Maraschino
¼ oz Creme de Violette – briotet is preferred producer
¾ oz Yuzu Juice
Serve up in a coupe or martini glass, no garnish.

METHOD

Shake ingredients in a cocktail shaker with ice until well chilled. Double strain into a chilled couple or martini glass and serve without garnish.
